Honey Garlic Chicken

This is an uncomplicated Honey Garlic Chicken dish for a weekday quick fix. Nothing fancy going on here. These are simple ingredients, using an easy method, creating a quick result.

This dish is delicious. That much I can say. Approvals erupted from all ages sitting around my dinner table tonight. Go for it.

Sometimes simple, is spectacular.

Honey Garlic Chicken

Ingredients

    • 4 boneless skinless chicken thighs 
    • salt and pepper 
    • 2 tbsp grape seed oil
    • 1 cup sliced sweet pepper medley  (red, yellow, orange)
    • 2 cloves of minced garlic
    • 2 tbsp butter
    • 1/3 cup unsalted chicken stock
    • 1/2 cup of honey
    • 1 tbsp soya sauce 
    • 1 tbsp rice wine vinegar 
    • 1 tsp chili flakes 
    • 1/2 cup of diced green onions
    • 1 tbsp sesame oil
    • 1/4 tsp of black sesame seeds per plate 
    • 1/4 tsp of white sesame seeds per plate
    • cooked white rice 

Instructions

  1. Season your chicken on both sides with salt and pepper. Then slice into 1″ strips. 
  2. Heat your grape seed oil in a heavy bottomed frying pan (12″) and add your chicken. 
  3. Cook the chicken until browned on both sides. (about 3 minutes per side) remove from the pan and set aside. 
  4. Add your peppers and cook for about 2 minutes until softened. Add the minced garlic and cook for another minute. 
  5. Add the chicken stock, honey, soya sauce, rice wine vinegar, and butter. Bring to a boil. Return the chicken to the pan and gently boil until sauce is reduced by 3/4. You should have a sticky saucy glaze. (takes about 10 minutes)
  6. Add the chilli pepper flakes, green onions, and sesame oil. Stir to combine. 
  7. Spoon the chicken and some sauce over the rice and serve. Sprinkle each plate with some sesame seeds and enjoy.
