Cabbage Roll Soup

Cabbage soup

There is nothing I love more than good old fashioned cabbage rolls. My husband’s mom makes the best ones. I on the other hand, struggle with the rolling part. Therefor, using her flavour profiles and ingredient list this soup is my secret weapon. And it is hearty. Some might call it a stew. Either way, it is delicious.

Ingredients

    1. 1 lb of lean ground beef
    2. 1 tbsp olive oil
    3. 1 medium onion diced
    4. 2 cloves of minced garlic
    5. 2 medium carrots peeled and diced
    6. 2 cups of coarsely shredded green cabbage
    7. 1 cup of chopped green kale
    8. 1/2 cup of uncooked white rice
    9. 3 tbsp granulated sugar
    10. 3 tbsp of pesto
    11. 6 cups of beef broth
    12. 1 14 oz can of Fire Roasted Tomatoes
    13. 1 16 oz jar of tomato sauce
    14. 2 bay leaves
    15. 3 fresh thyme sprigs
    16. 1 tbsp of red chilli flakes
    17. 1 tbsp of fresh dill
    18. Salt and pepper
    19. Fresh parsley for garnish

Instructions

  • In a large pot, add the olive oil, diced onion, garlic, and the beef. Sautee until the beef is completely browned and the onions have softened.
  • Add the remaining ingredients and cook of medium heat until boiling. Reduce to low and simmer for 30 minutes.
  • Serve with a parsley garnish and a pinch of finishing salt.
