I love a great pastry and these Lime & Ginger scones check off all the right boxes. Fluffy and light, crisp outer layer, subtle flavour kicks, while drenched in a delicious glaze. They are big. They are bold. And they will satisfy your morning breakfast on the run.
Add the flour, sugar, baking powder to a mixing bowl and stir.
Cut in the butter using a pastry blender until the butter is no larger than the size of pea
Add the butter milk and stir just until the mixture comes together.
Add the lime and ginger. Fold over a few times to incorporate. Do not Knead the dough. Light hands.
Place the dough on the parchment and sprinkle with a bit of flour if sticky. Form into a circle.
Cut in 6 pieces. Arrange them 2″ apart.
Bake in the oven for 15 minutes.
Remove from oven once browned. Allow the scones to cool down.
Drizzle with optional glaze and serve.
Notes
Optional Glaze: 1/4 cup blackberries | 1 tsp of Creme de Cassis | 1/4 cup of icing sugar. Pulse the blackberries in a food processor and then strain through a fine strainer to remove the seeds. Mix the puree with the creme de Cassis and icing sugar until smooth. Drizzle over the scones and serve.
