I love a great pastry and these Lime & Ginger scones check off all the right boxes. Fluffy and light, crisp outer layer, subtle flavour kicks, while drenched in a delicious glaze. They are big. They are bold. And they will satisfy your morning breakfast on the run.
Optional Glaze: 1/4 cup blackberries | 1 tsp of Creme de Cassis | 1/4 cup of icing sugar. Pulse the blackberries in a food processor and then strain through a fine strainer to remove the seeds.
