Garlic and Dill Tzatziki

Tzatziki sauce is one of my favourites. It is full of cucumber, garlic, dill, and creamy greek yogurt. Commonly, this joins fried calamari on its plate, or helps make a souvlaki pita shine. I like mine served on top of my Mediterranean Turkey Burger, or served in a bowl to dip my naan bread in. Either way…yummm is all I can say.

Fresh is best, therefor use fresh herbs, cucumbers, and yogurt to make this dish pop. It will keep for a week in the fridge so go big and indulge all week long. You won’t regret it.

Tzatziki Sauce

Ingredients

    1. 1 cup of Greek Yogurt
    2. 1/2 cup of grated Cucumber
    3. 2 cloves of minced Garlic
    4. 1 Tbsp fresh minced Dill
    5. Pinch of Salt 
    6. squeeze of Lemon Juice (about 1 tsp)
    7. Fresh ground Pepper
    8. Sprinkle of Cumin (optional)
    9. Olive Oil for garnish

Instructions

  1. Step one is to grate the cucumber. How do you do this? You cut the cucumber in half lengthwise. Using a spoon, scoop out the seeds and discard them. Grate the cucumber with a cheese grate. 
  2. Set the grated cucumber on a tea towel and sprinkle the the salt. Set aside on the towel for 10 Minutes. 
  3. Meanwhile, combine the yogurt, lemon, and dill. Stir. 
  4. Take your tea towel and fold it over the cucumber and press to absorb the liquid. Then place the dried cucumber into the yogurt mixture. 
  5. Add a pinch of cumin, and stir. Give it a taste and add salt and pepper to your liking. 
  6. Serve in a bowl with a drizzle of olive oil over top. Enjoy. 

Notes

If you want to thin this out at all, add some buttermilk (about a tsp at a time) until you have the consistency you like.
