My mother’s Quick Mix recipe is one that I have shared on this site already. Banana bread created using this mix as a base is a quick and easy snack solution. The recipe could not get easier. It is perfect for a home with little helpers just learning their way around the kitchen.
Grease a loaf pan with non-stick spray and then line the bottom with parchment paper.
In a large bowl, combine the quick mix, sugar, chocolate chips, pecans, and cinnamon and mix together.
In a blender, combine the banana, eggs, and vanilla and blend until smooth.
Add the liquid ingredients to the dry ingredients and stir just until combined.
Spread the mix in your loaf pan and bake in the oven for approx. 50 minutes. Check after 45 to ensure it is not getting over cooked. Test with a toothpick for readiness.
