Crumpets

Crumpets are the perfect match for all things sweet and savoury. Made up of tiny little pockets of air perfect for holding creamy butter, sweet jam, or the perfect poached egg. Step aside bagels and English Muffins. Bring on the Crumpets.

Ingredients

    1. 150 g white all-purpose flour
    2. 200 ml warm water
    3. 1/2 tsp salt
    4. 1/2 tsp sugar
    5. 1 tsp baking powder
    6. 1 tsp yeast
    7. 1 tbsp warm water
    8. grape seed oil / or Ghee

Instructions

You will need some special equipment for this recipe. Nothing overly fancy, but 3, 3 inch stainless steel cooking rings will be needed. In a pinch, if you have a heat proof round cookie cutter, that can work as well.
  1. Combine the flour, warm water, and salt with a small hand held blender and mix well for at least 1 minute.
  2. Combine the yeast and warm water and mix in a small bowl. Set aside.
  3. Add the sugar, baking powder, and yeast mixture to the flour mixture and mix to combine.
  4. Cover the batter with some cling wrap and set aside for an hour.
Meanwhile, prepare you cook station. You will need a 10 inch non stick skillet, the 3 cooking rings, the grape seed oil, a heat proof sauce brush, 1/4 cup measure, and wire cooling rack. Once batter is ready, heat your skillet over medium high heat. Lightly oil the skillet and the cooking rings. Add 1/4 cup of batter to each ring. Wait 2 minutes until the batter appears really bubbly and full of holes, turn down the heat to medium. Cook for 4 minutes or until the crumpets begin to brown and set. Once set, turn crumpets down to medium low and flip them for a quick 1 minute to brown the tops. Remove and cool on wire rack. Enjoy warm.

Notes

Freeze cooked and cooled crumpets in an air tight container for up to 3 months.
