Repurposing leftovers is actually an inherited trait passed down via my grandmother. My mom took that ball, she ran with it. Upped the anti. And now passed it on to me. I think I hover between the two if I am being honest. No one can find a place for a pot roast leftover better than my mom. But I am trying to do right by these two and stretching the creative muscles as much as I can.
Our family is tiny. Four of us for most holidays as extended family live scattered throughout the country. When I make a cake it is under the umbrella of literally, cake for days. Cheese cake is a family favourite and throwing it out is not an option. We normally freeze the slices but even then, it can be a too much when you are just craving a bite. Therefor, cheesecake bites fit the bill.
These ones are a messy result of leftover Carmel sauce, Basque cheesecake, and chocolate chips. I simply mashed the cheesecake with some graham cracker crumbs and rolled it into balls. Placed in the freezer. Then dipped frozen cake in the caramel. Let it set in the fridge and then dipped the balls in chocolate and placed in the fridge to set. Off to a ziplock freezer bag they go and voila. Cheesecake bites.
Avoiding the garbage but now I have to hit the gym. A win win.
