Yogurt Parfait Brûlée

This recipe is directly inspired by one of my favourite Chef’s Bobby Flay. He has a version of this in his breakfast recipe book and I love the concept so much. I think it is brilliant quite frankly.

The Yogurt Parfait Brûlée is an easy, delicious, and ridiculously glamorous dish to present. Cracking into the crisp Brûlée topping first thing in the morning with a fresh cup of Java is what dreams are made of.

The base of this dish is a simple berry compote. Layered with my granola recipe and topped with plain Greek Yogurt. Then the fun part starts. A sprinkle of castor sugar and a blow torch. Voila. Now a word of caution. Operating a blow torch before a sip of morning coffee is not recommended. Being fulling awake is mandatory.

Ingredients

  • Berry Compote
    1. 1 cup of blackberries or Raspberries or a combo of both
    2. 2 tbsp of white sugar
    3. 1 tbsp water
    4. 1 tsp corn starch
    Assembly:
    1. 1/2 cup Greek Yogurt
    2. 1/2 cup of Granola
    3. 1 tbsp castor sugar

     

Instructions

  1. Combine the berries, sugar, and water. 
  2. Bring to a boil. 
  3. Mash the berries with a fork.
  4. Mix the cornstarch with 1 tbsp of water. 
  5. Add the berry mixture and bring to a boil. Mixture should thicken and be clear. Resembling a jam. 
  6. Allow the berry mixture to cool down.
  7. In a small dish, add 1/4 cup of the berry mixture. Top with Granola and yogurt. 
  8. Sprinkle the castor sugar over top. 
  9. Using a kitchen torch, caramelize the top. 
  10. Enjoy a fancy pants start to the day.
