Bourbon Cherry Wings

Do you remember Wing Wednesdays? I do. I recall rushing down to my local pub for the $1 a wing snack attack. Eating my way through a twenty dollar bill in no time. Trying different flavours, sweet and savoury, chasing them down with the local cold brew. The Chicken Wing is a Pub’s right of passage and everyone has their own signature and favourite. Mine always is a sweet with heat combination.

Bourbon and sweet Cherries combined with various spices create a lovely sweet and spicy wing sauce. This Bourbon marinade and sauce combination are fun. These have become my signature wing flavour and I am gladly sharing it. They are perfect for sunny days and patio beers. This sauce also works with Ribs so you can take your game up even higher and have a wing and rib night for the win.

Bourbon Cherry Chicken Wings

Ingredients

  • Cherry BBQ Sauce
  • 1 medium onion, chopped
    2 tablespoons olive oil
    3 garlic cloves, minced
    2 cups fresh or frozen dark sweet cherries, pitted and coarsely chopped
    2/3 cup packed brown sugar
    1/4 cup Serrano Honey Balsamic Vinegar (from Evoolution) or Cider Vinegar
    1 cup ketchup
    1 tablespoon Worcestershire sauce
    1 teaspoon ground mustard
    1/2 teaspoon pepper
    2 Tbsp of Bourbon
    2 Tbsp of Honey

  • Chicken Wings (marinade)
  • 2 lbs of Chicken Wings

  • 1 cup of Bourbon

  • 2 cloves minced garlic 

  • 3 tbsp olive oil

  • Salt and Pepper

Instructions

  1. Step one is to combine your marinade ingredients. Pat your wings dry with some paper towel and pop them in a ziplock bag. Add the marinade and move it around to coat. Place in the fridge for at least 3 hours or over night turning the bag every so often to distribute the marinade. 
  2. Next make the BBQ sauce. 
    1. Using a medium sized sauce pan, add your olive oil, garlic, and onions to the pan. Saute until the onions are soft and the garlic is fragrant. 
    2. Combine the rest of the ingredients and bring to a boil. 
    3. Reduce heat, and allow to simmer for twenty minutes. 
    4. Using a blender, or an immersion blender, puree the BBQ sauce until smooth. 
    5. Place in container and store in the fridge overnight to blend flavours. 
  3. Preheat your oven to 400°
  4. Remove the wings from the marinade and discard the remaining marinade. Then place the wings on a sheet pan lined with parchment. Sprinkle the wings with some salt and pepper and a drizzle of olive oil. Bake on the middle rack of your oven for 20 minutes. Flip. Add more salt and pepper. Bake for 20 more minutes. 
  5. Remove the wings from the oven and place them in bowl. Add about 1/2 cup of the BBQ sauce to them and give a nice toss to evenly coat the wings. Return them to the parchment lined pan and bake for an additional 10 minutes. 
  6. Remove from oven, plate and serve with some additional BBQ sauce.
