Take a small plate and combine the smoked salt and kosher salt. Set aside.
Using a short, old fashioned glass, dip one edge / side of the glass into the honey. Or smear the honey on the side of glass with a pastry brush. Roll the glass in smoked salt and kosher salt.
Place a large ice cube in the glass.
In a mixing jug, combine small cubed ice, tequila, grapefruit juice, agave, and bitters. Stir for about 30 seconds. The using a strainer, pour over the large ice cube in the glass.
