In the bowl of a stand mixer with a paddle mixer attachment, add the room temp blue cheese, room temp cream cheese, room temp mascarpone, and sugar. Mix until well incorporated on a medium speed. Scraping down the sides randomly.
Add the eggs one at a time. Mix each egg in well, and scrape down the sides of the bowl between each addition.
Using a low speed on the mixer, add the flour and mix until incorporated.
Add the sour cream and mix again. Scraping down the sides of the bowl. The mixture should be smooth and creamy.
Pour into prepared pan and place in the middle rack of the preheated oven. Bake for 30 minutes until the middle doesn’t wiggle.
When done, remove from oven and cool. Then transfer to the fridge to set for at least 2 hours, but ideally overnight.
Cut into little triangle wedges and serve with the bacon jam.
