Glazed Carrots

I am a huge fan of root vegetables and carrots are definitely in my top 3. Versatile and full of flavour this vegetable compliments soups, stews, and stocks. They are the show stealer in stir fry’s and make subtle appearances in cakes. The use for this vegetable is unlimited however it also shines on its own.

This recipe for Glazed carrots makes the perfect carrot every single time. Just the right amount of sticky sweet glaze joins the flawless texture of the vegetable to present this family favourite side dish. Gone are the days of mushy carrots and burnt sugar. I promise.

For this post I took some lovely purple carrots and focused on their gorgeous dark hue however, the more color the better. Using a rainbow carrot variety would be absolutely gorgeous in my opinion. Have fun with your selections regardless of what you choose. Enjoy!

Glazed Carrots

Ingredients

    1. 1 lb of carrots
    2. 1 tsp of granulated sugar
    3. 1 tsp of butter
    4. water
    5. 2 drops of champagne vinegar
    6. Minced Parsley for garnish

Instructions

  1. First you need to peel and cut the carrots. The carrots need to be cut in medium bite sized dices. Try to make each dice, the same size. If you need to cut in half to do this, please do. 
  2. Place carrots in a medium sized pot and give them a shake. they should all scatter and cover the bottom of the pot without layering on top of one another. If they are crowded and can’t spread, use a larger pot. 
  3. Fill the pot with water so as to just cover the carrots barely. 
  4. Add the sugar by sprinkling it evenly over the carrots. Add the butter and vinegar as well. 
  5. Turn the heat to medium high and cook until all the water has evaporated and carrots are shinny. They should be soft enough to bite, but not mushy at all. 
  6. Add the parsley and toss. Dump carrots into a serving dish and enjoy.
