Fire Roasted Tomato Salsa

Are you looking for a fresh, healthy, quick, and easy salsa recipe? This one will do the trick I promise. Loaded with fresh veggies, some subtle heat, and a nice spice kick this recipe is my families “go to.”

All you need is a Food Processor or a heavy duty blender. That is it. No cooking. No fuss.

Perfect as a taco topper or nacho dipper this salsa is light and versatile. Give it a try today.

Fire Roasted Tomato Salsa

Serves: 2 cups

Ingredients

    1. 1 14oz can of Fire Roasted Tomatoes 
    2. 1/2 of a fresh Jalapeño peppers with seeds removed 
    3. 2 cloves chopped fresh garlic
    4. 2 green onions white parts included
    5. 1 tsp silk chilli powder
    6. 1/2 tsp smoked paprika 
    7. 1/2 tsp cumin
    8. 1/2 tsp salt
    9. 1 tsp lime zest
    10. 1 tsp lime juice 
    11. 1/2 tsp pepper

Instructions

  1. Drain the Fire Roasted Tomatoes and add them to a food processor.
  2. Mince the Jalapeño in a rough chop and add to the food processor.
  3. Add the garlic to the food processor. 
  4. Trim the roots off of the green onions and discard. Roughly chop the remaining green and white parts of the onions and add to the food processor.
  5. Add the remaining ingredients to the food processor and pulse for about 12 pulses. 
  6. Serve. 

Notes

I don't have cilantro added to this recipe simply because my family wont eat it. They taste soap. I taste heaven. We have compromised. However, if you want to add some, throw about 1 tbsp of minced cilantro into the the mix after pulsing. And just stir it in. You don't want to pulse the cilantro. Leave some bigger leaves in there.
