Spiced Dehydrated Citrus

Holiday baking and creating brings our scents to life. The smell of cinnamon, nutmeg, cloves, ginger, and vanilla makes me so happy. I love the smell of gingerbread and warm cider while puttering around the kitchen. Holiday songs are blaring, the decorations are twinkling, and the eager anticipation of family visits puts a smile on my face.

Holiday cocktails are part of the menu and creating these amazing drinks to share and enjoy is a blast. Mixing syrups with bitters, and using sugars and cookies for garnishes is a hoot. One of my favourite garnishes to create are perfectly spiced dehydrated citrus. Blood Oranges specifically.

This garnish feeds the senses. It smells good. It tastes good. And it looks good. Furthermore, it is easy to make. What more can you ask for?

Spiced Dehydrated Citrus

Ingredients

    1. Oranges sliced 1/4" thick
    2. Vanilla or whiskey sugar
    3. Cinnamon
    4. Nutmeg
    5. Minced Fresh Rosemary

Instructions

  1. Preheat the oven to 200*
  2. Line a rimmed baking sheet with parchment paper. 
  3. Arranged the oranges in a single layer on the pan. 
  4. Sprinkle the oranges with the vanilla sugar. Just a pinch over each orange. 
  5. Sprinkle the cinnamon over the oranges along the the minced rosemary. 
  6. Grate fresh nutmeg over them as well. Not much. Just a fine grate. About 1/4 tsp total. 
  7. Bake in the middle rack of the oven for 6 hours. Turn the oven off and allow to cool for 2 more hours. 

Notes

Do the same technique with lemons however swap the vanilla sugar for white sugar. Omit the cinnamon and nutmeg. Add fresh lemon thyme and dried culinary lavender.
