Whipped Scotch Cookies

Whipped Scotch Shortbread

One of my favourite holiday treats are these whipped scotch cookies. This is my mom’s recipe. While visiting her last year she opened up her tin recipe card box and began browsing through. Together we walked through my childhood one recipe at a time. It was incredibly nostalgic and fun. Wth her blessing, this is the first of a few favourites I am going to share this Holiday Season. I trust you will enjoy making them as much as we do.

Whipped Scotch Cookies

Ingredients

    1. 1 lb of rich European butter 
    2. 1 cup of icing sugar sifted 
    3. 1/2 cup of corn starch sifted
    4. 1/2 tsp of fresh vanilla
    5. 3 cups of all purpose flour
    6. 1 jar of whiskey or Amaretto preserved cherries

Instructions

  1. Preheat your oven to 325° 
  2. Line a baking sheet with parchment
  3. Blend the first 3 ingredients in a stand mixer or food processor. 
  4. Add the vanilla and mix until blended. 
  5. Gradually add the flour 1 cup at a time until it has been incorporated. 
  6. Using a 1/2 tsp measure, roll the dough into balls. 
  7. Press half a cherry into the centre of each dough ball. 
  8. Bake for 18-25 minutes until bottoms are lightly browned. 
  9. Cool on a wire rack before serving.
