Let me begin this post with stating how much I love bacon. I would put bacon on everything if I could. And trust me, I try.

This recipe for Honey Bacon Jam is the perfect sweet and savoury condiment for any occasion. It goes incredibly well with a charcuterie board, brings a grilled cheese sandwich to new heights, and sits on a Pierogi like a king. The uses are literally endless and I can’t get enough of it.

Honey Bacon Jam

Ingredients

    1. 2 lbs of Bacon diced
    2. 2 sweet Onions cut in half and sliced into thin strips
    3. 1 Pinch of Maldon salt 
    4. 2 tbsp of Bacon Grease
    5. 1/4 cup + 1 Tbsp of Dark Brown Sugar
    6. 2 Tbsp of fresh Honey (or maple syrup for a Canadian kick)
    7. 1/3 cup of Dark Expresso 
    8. 1/2 cup of Water
    9. 1 Tbsp of Honey Balsamic Vinegar (or maple balsamic)

Instructions

  1. In a non stick frying pan over medium high heat, cook your diced bacon until slightly crisp. Remove from pan, drain all by 2 tbsp of the grease and return the pan to the heat. 
  2. Add the onions to the bacon grease and sprinkle with a pinch of Maldon salt. Cook over Medium heat until the onions soften and begin to caramelize. This should take about 10 minutes or so. 
  3. Once onions have caramelized, add the brown sugar and the honey to them and continue to cook on low heat until sugar has been reduced and onions are nice and caramelized with a deep brown hue. Approximately 20 minutes. 
  4. Add the expresso, water, and bacon back to the jam. Turn your heat up to medium and cook until juices reduce the sauce to a thick jammy consistency. 
  5. Add the balsamic and give this jam a good stir. Cook for 2 more minutes and then remove from heat. Give it a taste and add more salt if needed. 
  6. Store in the fridge in a covered mason jar for up to a week. 

Notes

Serve this jam on Grilled Cheese, serve with Pierogis, add to your cheese board for a bit of a wow factor, smear it on pancakes even. Truthfully you can use this on anything you want. Just go for it.
