Fresh Caesar Salad Dressing

Homemade Caesar Salad Dressing

What does a 24 year old classic Caesar Salad Dressing recipe consist of? I’ll tell you. Fresh ingredients, a foolproof technique, and a delightful flavour combination.

This recipe combines the salty anchovy and parmesan, with the brine of capers and the citrus of fresh lemon. Holding these flavours together is the smooth and savoury flavour of your favourite olive oil.

It is a crowd pleaser. This much I can promise. All you need is a wooden salad bowl, two forks, and some Romaine Lettuce with your name on it.

Fresh Caesar Salad Dressing

Ingredients

  • Toppings:
    • 1/2 cup Diced, fried, Bacon Bits
    • 1 Cup crispy croutons
    • Shaved Fresh Parmesan 
    • Lemon wedges 
    • Freshly Cracked Black Pepper
    Dressing: 
    • 1 tsp Fresh Cracked Black Pepper
    • 1/2 tsp Fresh Salt
    • 1 Peeled Garlic Clove
    • 3 Anchovy Fillets 
    • 1 tsp Capers 
    • 1 tsp Dijon Mustard
    • 1 Egg Yolk
    • 1 tsp Lemon Juice 
    • 1/2 tbsp Red Wine Vinegar
    • 75 ml Rosemary Flavoured Olive oil (I use Evoolution)
    • 75 ml medium bodied Olive Oil (I use Evoolution)
    • 1/2 cup freshly grated Parmesan Cheese 

    1 large head of Romain Lettuce torn into bite sized pieces 

    Gather a wooden salad bowl and two forks. 

Instructions

Dressing:
  1. Using a wooden salad bowl, add the cracked pepper and fresh salt to the bowl. Toss in the garlic clove and using the two forks, mash and mince the garlic in the bowl. You do this by placing one fork in each hand, and pressing the tings of the forks into the garlic working on shredding and mincing the clove. 
  2. Add the Anchovy Fillets and mash them into the garlic pulp. 
  3. Add the capers and minced them until they form chunky pieces.
  4. Add the Egg yolk, Dijon, Lemon Juice, and Red Wine Vinegar.  Mix into the pulp. 
  5. Using both forks now in one hand, splay them so the 8 tings are are placed on the bottom of the bowl. 
  6. Slowly drizzle the Olive Oil into the bowl while whisking the mixture with your forks. The dressing should thicken and become creamy. 
  7. Add the Parmesan Cheese, mix. And your dressing is ready to go.
  8. Add the Romain Lettuce. Toss and portion into each salad bowl. Portion out the bacon and croutons between each serving. Top with fresh Parmesan and a Lemon wedge. Sprinkle cracked pepper over each salad and serve.
